Cornmeal Pudding
6 cups water
2 cinnamon leaves
2 cups Sugar
1/4 cup butter
1 tbsp Mace
4 oz. Raisins or Currants
3 cups cornmeal
1/2 cup flour
1 tsp nutmeg
1 packet instant milk powder
21/2 cups coconut milk
1 tsp Vanilla Flavoring
1 tsp salt
Method
1. Boil water, cinnamon leaves, mace, add sugar, butter and raisins or currants.
2. Mix all dry ingredients - cornmeal, flour, nutmeg, milk powder.
3. Add coconut milk and vanilla flavouring to dry ingredients and mix well.
4. Remove cinnamon leaves and mace from boiling liquid and add cornmeal mixture mixing carefully to avoid lumps.
5. Mix constantly for about 3 minutes then turn mixture out into a greased baking pan
6. Bake at 350 degrees for approximately 1 hour
This delicious pudding can be eaten as is or you can serve it with a sweet sauce.
